Food engineering has expanded significantly in terms of the issues addressed and the tools used to improve food processing and traceability. Artificial intelligence, mathematical modeling, and software development are being increasingly applied in this field. This presents challenges for researchers and practitioners in terms of understanding the breadth and diversity of the field. Quality standards, traceability, cost and energy savings are important considerations in food engineering. The International Food Operations & Processing Simulation Workshop has the potential to contribute to the literature by evaluating current research and providing advanced approaches for future development. This includes topics such as modeling and simulation of food processes, optimization of emerging food technologies, risk assessment, food safety, and shelf-life prediction. Additionally, it addresses areas like food packaging, sustainability, production planning, supply chain and cold chain design, inventory management, and automation of production processes and logistics.
