The cultivation of white button, brown mushrooms, and Portabella mushrooms begins in a lab. Mushroom spores are added to cereal grains, which are then incubated until they turn into spawn or 'mushroom seeds'. At the mushroom farm, growers meticulously prepare the growing medium for mushroom production. The first mushrooms are ready for harvest after approximately three weeks. Throughout the growth period, mushroom farmers mimic the role of Mother Nature by manipulating factors such as water, airflow, temperature, and more to optimize mushroom growth. Specialty mushrooms like Shiitake, Oyster, and Maiitake are grown differently, either on logs or in bags. The process of inoculating logs involves placing mycelium (spawn) inside the growing medium, whether natural or synthetic, and then controlling the climate (temperature, humidity, light, and air).
